Fruit Tea Loaf

Last remaining slices of my fruit tea loaf

This is a recipe I found scribbled on a piece of paper in my gran’s old recipe book. The loaf is delicious once allowed to cool. It is even better the following day as the fruit moistens the loaf.

  • 1 tea cup porridge oats
  • 1 tea cup plain flour
  • 1 tea cup sugar
  • 1 tea cup boiling water
  • 1 tea cup raisins
  • 1 teaspoon bicarbonate of soda
  • 1 oz margarine
  • 1 egg

Method

  1. Turn oven to 375ºF or 190ºC, 170ºC for fan ovens.
  2. Place fruit in bowl with boiling water and bicarbonate of soda.
  3. Rub margarine into flour and porridge oats.
  4. Add sugar, beaten egg and fruit and water mixture.
  5. Mix thoroughly and pour into greased loaf tin.
  6. Bake in oven for about 1 hour. Insert cocktail stick and if it comes out clean it is ready.

    Made this recipe again last night. Substituted the boiling water for boiling hot strong tea. Didn’t have enough raisins so used up all the different bits of dried fruit I have in the cupboard. In this case dried cranberries, chopped candied peel and a few chopped up glace cherries. Yum!
